Splashing through the Yukon River

On Monday, we jumped on the snow machine to Emmonak to get some much needed groceries.

 It was a warm day, in the upper 20's, so the snow on some parts of the river were slush.  It also created a lot of what we call "overflow," which is when the water seeps up from the river and pools on top of the ice.


There was also a layer of crunchy ice on top of the snow.


We decided to try the Emmonak Restaurant while we were there.  
We had the burger and fries, it was good!

We rode through some of the tundra on the bank to avoid the overflow.

There were some places that we had no other choice, but to just "splash" on through.

We squeezed everything in our bag, except for this loaf of bread.  It was my job to hold it riding back.

It was also one of those weeks, so I cooked!
Frozen Personal Pan Pizzas
{Ingredients: 2 1/2 tsp (.25 oz) active dry yeast, 1 tsp white sugar, 1 c. warm water, 2 1/2 c. flour, 2 Tbsp olive oil, 1 tsp salt, 1 can pizza sauce, shredded cheese, pizza toppings}
Yields: 3 personal pan pizzas (I doubled the recipe below)

1. Make the crust.  Dissolve 2 1/2 tsp (.25 oz) active dry yeast and 1 tsp white sugar in 1 c. warm water.  Let stand until creamy, about 10 min. Stir in 2 1/2 c. flour, 1 tsp salt, and 2 Tbsp oil.  Beat until smooth.  Let rest for 5 minutes.

2. On a floured surface, divide dough into 3 balls.

3. Lay saran wrap over paper plate.

4. Place dough in center of plate.

5. Roll out or press out with fingers until dough covers entire plate.

6. Spread pizza sauce on pizzas.

7. Add cheese.

8. Add toppings.

9. Place in gallon freezer bags.

10. When ready to cook, simply take it out of the bag and place on a lightly greased cookie sheet.

11. Bake at 450 for 15-20 minutes.  Enjoy!
